I was sitting at home the other day and fancied something yummy to eat. After raiding the cupboards and finding them empty, I decided to try out a new recipe with some of the ingredients I had lying about. We always have porridge oats in the cupboard, so oat cookies seemed to fit the bill.
Serves: makes 16 cookies
Prep Time: 10 minutes
Baking Time: 15 minutes
4oz soft light brown sugar
8oz self raising flour
Preheat the oven to 180 degrees celsius fan.
Cream the butter and sugar together until pale.
Sieve in the flour and mix.
Mix in the oats.
Draw the mixture together with your hands and roll into balls (golf ball size).
Place the cookie balls onto a lined baking tray.
Using the back of your fingers, gently push down on the cookies to flatten.
Bake in the oven for 15 minutes until golden brown.
Cookies ready to go in the oven.
You could try adding cherries, dried fruit, nuts or chocolate chips to this recipe. Another idea would be to drizzle icing over the top of each cookie once cooled, or even dipping the edges into melted chocolate…mmmm!
