If you fancy something yummy, cheap and easy to make, these Savoury Egg Muffins fit the bill!
6 medium eggs
1 oz grated cheddar
Half pepper, diced
1 medium tomato, diced
1 – 2 closed cup mushrooms, diced
Splash of milk
Salt and pepper
Preheat the oven to 180 degrees Celsius.
Beat all the ingredients together in a bowl.
Pour the eggy mixture into lightly oiled silicon cupcake cases.
Bake in the oven for 20 minutes until golden brown.
Mix It Up!
Using the egg and milk as your base, you can add absolutely anything to the mixture. I use whatever is in my fridge! You could make them fishy with salmon and dill. You could make breakfast muffins with bacon, sausage, mushrooms and tomatoes. This recipe is easy to adapt. Kids will love helping make new concoctions too!
